I saw this recipe on pinterest and I thought it was worth a try with some adaptions to fit my diet. Basically you take frozen pre made taquitos and slightly defrost them. Then you place a layer of enchilada sauce in the pan. Next add 1 layer of taquitos. The next layer is 1 can of cooked refried beans,then layer with red onions and daiya cheese . Finally repeat the taquitos layer only and top with remaining sauce. Cover and bake for 25 minutes at 375. Uncover and top with daiya,onions and olives and bake until cheese is melted. Oh my this was so yummy especially served with rice. So much easier to make and all gluten, soy and dairy free!
