I saw a similar recipe online that used cauliflower as the main ingredient in the pizza crust. I figured I'd give it a try but use daiya vegan cheese instead of cow milk cheese. It was so super yummy and it is gluten free, dairy free and soy free. I play around with the amounts of shredded cauliflower and daiya but for the most part try to use equal amounts. I've tried this with Daiya's block of cheese and shred it and also the pre shredded both work but I think I prefer the block just because I can use less of it.
-1 cup cooked & shredded cauliflower
-1/2 to 1 cup of daiya mozzarella shredded
- a few pinches of garlic powder or fresh to season
Mix all up in a bowl and spread out into a greased glass pie pan. Sprinkle with whatever toppings you like. 425 degrees for 20-30 minutes, check to make sure it is golden brown. Serves and enjoy. It isn't like a slice of pizza so it is easiest to eat with a fork.
