I was excited to learn my local Gluten Free store had a package left of the Udi's gluten free tortillas. I have tried other brands but have never liked any of them. Udi's tortillas actually,smell and feel like a real flour tortilla. I did a test on 2 tortillas. 1st 1/2 of tortilla I ate plain and it was a tad dry. Second I added some cashew cheese spread to a warmed tortilla and it tasted much better but kinda had a doughy texture. Then I tried to roll a room temp tortilla and it broke. Next I then attempted to roll a slightly warmed tortilla and it worked nicely with no breakage.
So my best advise is to slightly warm the tortilla in the microwave for about 15-20 seconds. If you are going to be spreading peanut-butter or cream cheese I'd recommend after you warm it to let it slightly cool for a minute or less before spreading. Overall as long as the tortilla was slightly warmed the taste and texture were great.
They come in a package of 8 for about $5-$6 a package and they are a smaller size kinda like fajita size. Even though they are small, with your toppings they are quite filling. I know I will definitely buy these again. My next test will be seeing if after I roll them if they will maintain the shape or if they will break once cooled.
