I originally discovered this recipe on a Tasty video which called for cut carrots. When I first attempted it all I had on hand was sweet potatoes. It turned out so delicious my family gobbled it up before I even took a photo. I made it a second time with purple finger potatoes but it was not good at all. On my third try I used carrots just as recipe calls and it was fantastic! I highly recommend making these & yes it is naturally gluten free.
A large bowl of cut up carrots or sweet potatoes (French fry length)
2 tbsp olive oil
1/2 cup grated parmesan cheese
1/3 cup dried parsley
1-2 cloves of fresh pressed garlic
1 tsp pink Himalayan sea salt
Pinch of pepper
Combine together in large bowl, mix well. Spread out evenly on a pan. Bake for 15 minutes at 400 degrees.
